    Maple Mustard Pork Roast

    2 1/2 lb. boneless pork loin roast
    salt & pepper to taste
    2/3 cu real maple syrup
    3 T. dijon mustard
    1 T. soy sauce
    1 T. fresh rosemary, finely chopped
    2 lb. carrots, pared and sliced diagonally
    4-6 med. red potatoes, washed and halved
    4 small onions, skinned and halved

    Preheat oven to 350

    Place roast in a shallow roasting pan and season with salt and pepper. In a small bowl, combine maple syrup, mustard, soy sauce and rosemary. Brush over entire roast. Add carrots, potatoes and onions to pan and pour remaining sauce heavily over roast and drizzle over vegies.

    Place in oven and baste meat and vegies with pan juices at 20 min. intervals, until internal temp of pork reached 160-170 and vegies are tender (approx. 1 - 1 1/4 hrs)
    Remove roast from oven, slice and serve with veggies.
    Makes approximately 8 servings.
