Meat Loaf with Yogurt

1 cup yogurt
1 package onion soup mix
3 eggs, well beaten
1/4 teaspoon pepper
1 teaspoon salt
1 tablespoon butter or margarine
1 1/2 pounds chopped beef
1 cup soft bread crumbs, do not use crusts

Preheat ovent o 375 degrees F.
Mix the yogurt, onion soup mix and eggs very well. Add the pepper and salt and set aside to allow the flavors to blend.
Melt the butter or margarine in a large skillet. Add the chopped beef and brown evenly until all of the meat is well separated.
Mix the bread crumbs with the eggs, yogurt, and onion soup.
Strain the browned meat through a sieve so that there is no fat left in it. Reserve the drippings. Add the browned meat to the other ingredients and mix very well.
Use a small portion of the drippings to grease a loaf tin. Place the meat mixture in the tin.
Bake at 375 degrees for 30 minutes or until the center of the loaf is firm.
Invert the loaf on a hot platter and place under the broiler for 5 minutes to brown the bottom; then remove from oven.
