Plum Pork Cutlets

1 pound of boneless pork cutlets, 1/2" thick
1 tablespoon of vegetable oil
One 8 ounce jar of plum jelly or preserves
1/2 onion
1/4 cup of wine vinegar
2 teaspoons of soy sauce
1 teaspoon of ground ginger
Heat oil in large skillet over medium-high heat. Brown cutlets on both sides.Add the remaining ingredients. Cover and simmer 10-12 minutes.
