Pork Florentine Loaf

2 pounds fresh ground pork
2 eggs (beaten)
3 cups stuffing mix, herb flavor (divided, reserve 1 cup)
1/2 cup chopped apple
2 tablespoon "A1" sauce
1 cup spinach (cooked and drained)
dash of pepper if desired
Recipe
Preheat over to 375 degrees. In mixing bowl combine eggs, 2 cups stuffing mix, chopped apples "A1" sauce, and a dash of pepper. Add fresh ground pork and mix well. ON a sheet of plastic wrap, roll ground pork mixture in a 9 X 12 rectangle and 1 inch high. Roll until even. Cover evenly with spinach on top of fresh pork mixture. Roll up carefully. Make into the shape of a loaf. Sprinkle one cup of stuffing mix on top and pat into the pork roll. Bake 45-50 minutes at 375 degrees or until done. Serves 8.
