    1 1/2 pounds ground or diced pork (1/4 inch dice), I have used Boston butt or boneless country ribs
    1 (1.3 ounces) envelope Sloppy Joe mix
    1 (6 ounces) can tomato paste
    1 cup water
    1/3 cup apple cider vinegar
    1/4 cup molasses
    1/2 cup seedless raisins

    Recipe



    Brown pork in non-stick skillet, about 5 minutes. Sprinkle Sloppy Joe mix over pork, add water and tomato paste; mix together. Simmer over low heat for 2 minutes. Add remaining ingredients, mix well and simmer for 10 minutes. Serve over rice which is the traditional Cuban way or wrapped in a tortilla or taco shell.

    Cook's Note: Piccadillo, a Cuban favorite, is traditionally made with beef. I developed this recipe using pork as a quick, tasty and healthy alternative.
