    4 ea. 12 oz. Prime New York Steaks
    1/4 C. Peppercorn Crust
    8 oz. Port wine demi-glace
    Whipped Potatoes
    Crispy Onion Rings

    Peppercorn Crust
    8 oz. Unsalted Butter, softened
    8 oz. mixed dried peppercorns, ground
    In a mixing bowl mix ingredients until well incorporated. Reserve.

    Port Wine Demi-Glace
    1 c. minced shallots
    1 each bay leave
    1 each Thyme Sprig
    2 each Parsley Stems
    4 each Button Mushrooms, slice
    4 cups port wine
    2 cups red cooking wine
    1 T. Red wine vinegar
    4 cups Veal stock
    2 T. Unsalted butter, softened
    In a heavy non reactive sauce pan reduce all ingredinents to 2 cups. Slowly stir in soft butter bit by bit. Adjust seasoning with salt & white pepper. Reserve until ready to use.

    Preheat oven to 450 degrees. Season steaks on both sides with salt and white pepper. In an extremely hot pan on high heat sear steaks 2 minutes on first side, turn steaks over and cook for 1 more minute on other side. Using an offset spatula, smooth about 1 tablespoon over crust mixture over 1 side of steak. Finish cooking in oven to desired doneness. Allow to meat to rest for 4 minutes if slicing. Arrange on pre-heated serving plate with whipped potatoes. Spoon 2 ounces of sauce around each steak and garnish with crispy onion rings. Serve and enjoy!
