    1 5- to 6-lb. smoked ham
    2 Tbsp. Dijon-style mustard
    1 cup cranberry juice cocktail
    1 cup fresh cranberries, finely chopped
    ¼ cup finely chopped walnuts
    ½ cup fresh raspberries, mashed
    ¾-1 cup raspberry preserves
    Gingered Country Biscuits
    (see recipe below)

    Line a large roasting pan with aluminum foil. Place the ham in the pan. Spread the mustard evenly over the surface of the ham. Pour the cranberry juice over the ham. Roast in a 325° oven for 2 hours or until a meat thermometer registers 140°, basting frequently.
    In a bowl, combine cranberries, walnuts, raspberries, and preserves. Toss to mix. Spoon the glaze mixture over the ham with ½ hour of roasting time remaining. Spoon the glaze over the ham once more before finished.
    To serve, cut ham into thin slices, place on a platter, and cover lightly with the glaze mixture and pan juices. For sandwiches, serve ham with Gingered Country Biscuits. Makes 20 to 24 servings.
    Substitution tip: If you have difficulty finding fresh cranberries, substitute 1 cup frozen cranberries (no need to thaw) or 1/2 cup dried cranberries.

    Gingered Country Biscuits

    ½ cup unsalted butter, softened
    ¼ cup packed brown sugar
    1 Tbsp. molasses
    1/4 cup apple cider
    2 cups unbleached all-purpose flour
    1 Tbsp. baking powder
    1-1½ tsp. ground ginger
    ¼tsp. baking soda
    ¼ cup finely chopped crystallized ginger

    In a large mixing bowl with a wooden spoon blend together butter and brown sugar until well mixed. Stir in molasses and cider (mixture will separate). In another bowl combine flour, baking powder, ground ginger, and baking soda. Stir crystallized ginger into the flour mixture. Stir flour mixture into butter mixture until well blended.
    On a lightly floured surface, roll dough to 3/4-inch thickness. With a biscuit cutter, cut the dough into 1½-inch rounds. Place on a greased baking sheet. Bake in a 400° oven for 8 to 10 minutes or until lightly browned. Remove biscuits from baking sheet and cool slightly on a wire rack; serve warm. Makes 14 biscuits.
