    ST. Patrick's Corned Beef Dinner

    4 to 6 pounds of brisket of beef
    1 quart of beer or ale
    6 peppercorns
    2 bay leaves
    1/2 teaspoon of thyme
    Peeled small white potatoes
    Small onions
    Carrots
    Wedges of green cabbage

    Simmer the beef in the beer and seasonings over a lot heat for 4 hours or longer until meat is very tender.
    During last 30 minutes of cooking time, add vegetables. Continue cooking until vegetables are done. Serves 8.
