    Slow Cooked Pulled Pork

    List of Ingredients




    3 pounds pork shoulder roast or Boston butt
    1 T. kosher salt
    Fresh ground black pepper

    3 onions, peeled and sliced thin
    2 red peppers, cored and diced
    12 cloves garlic, peeled and chopped fine

    Recipe



    --Pre-heat oven to 350 degrees F.
    --Coat the pork with salt and pepper and place in the oven until tender, about 3 hours.
    --When the pork is very tender, remove from oven and cool slightly. When the meat can be pulled from the bone, begin to take the meat off the bone and place in a bowl.
    --Use 1 c. of the fat that came off the meat and place it in a large sauce pan over high heat. Place the onions, peppers and garlic in the pan and, stirring often, brown well. Add the pulled pork to the pan and the remaining roasting juices and continue to cook for 10 minutes. Adjust seasonings if needed.
