    Southwest Pork & Green Chile Skillet

    Servings: 4

    2 tablespoons olive oil
    2 teaspoons garlic, diced
    1 cup onion, coarsely diced
    1 pound pork tenderloin, 1/2-inch cubes
    1 cup canned diced tomatoes
    2 whole green chili peppers, coarsely chopped
    1 cup white and yellow corn, frozen or canned

    Heat a large skillet over medium-high heat. Add the oil and turn the heat to high. Add the pork tenderloin, garlic and onions. Cook, stirring frequently, until meat cubes and onion begin to brown. When the meat and onions are evenly browned, (approximately 5 minutes) reduce heat to medium and add the diced tomatoes, green chiles and corn. Stir vegetables into meat mixture and simmer for 2 to 3 minutes.
