    1/2 c Water
    1 tb Cornstarch
    1 tb Soy sauce
    1 tb Dry sherry
    1/2 ts Sugar
    1/2 ts Ground ginger
    2 lg Eggs
    1 lb Ground beef
    3 x Green onions, chopped
    1 pk Frozen cut green beans, thawed
    Hot cooked rice
    1 tb Vegetable oil

    Recipe



    In small bowl, combine water, cornstarch, soy sauce, sherry, sugar and ginger. Set aside.

    In a cup, beat 2 large eggs.

    In skillet, heat oil and add the beaten eggs; let them spread to form a thin layer in the skillet.
    Cook until bottom is set. Turn and cook until top is set.

    Transfer the egg to a cutting board and cut into 1/4 inch wide strips.

    In the same skillet, cook the ground beef until well browned. Add green onions. Cook for about a minute. Drain off fat. Add green beans and soy-sauce mixture to beef.

    Cook, stirring constantly, until thickened. Stir in egg strips.

    Serve over rice.

    Serves 4.
