    1-1/2 Lbs. veal steak, slice thin
    1/4 cup flour
    2 Tbls. butter
    2 Tbls. flour
    1 1/2 cups boiling water or broth
    1 medium onion, sliced

    Wash the veal and trim off fat. Cut into 6 pieces of uniform size and rectangular shape. Spread each piece with stuffing

    Stuffing

    2 oz. salt pork
    1/8 tsp. thyme
    1 egg, beat
    1/2 onion, diced
    1 tsp. salt
    2 T. lemon juice
    1/4 tsp celery salt
    3/4 c. bread crumbs
    1/8 tsp. pepper

    Put the salt pork through food chopper.
    Add the egg. Mix in other ingredients.
    Divide into portions for number of veal slices.
    Roll into little rolls, holding together with skewers.
    Roll in the 1/4 cup flour and brown in the melted butter.
    Remove "birds" from pan and place in casserole, top with sliced onions.
    Add 2 Tbls. flour to drippings in pan, stirring to prevent lumps.
    Stir in boiling water (broth) until thickened. Pour over "birds" and onions.
    Cover and bake at 375° for 1 hr. and 30 minutes or until meat is tender.
