    Farfalle Pasta with Brie and Tomatoes

    1 (16-oz.) package farfalle (bow-ties) pasta
    1 (15-oz.) round Brie
    4 large tomatoes, seeded and diced
    1 C. chopped fresh basil
    1/2 C. extra-virgin olive oil
    1 tsp. salt
    1 tsp. minced garlic
    1/2 tsp. freshly ground pepper

    Recipe



    Cook pasta according to package directions; drain. Rinse pasta, and drain again. Cover and chill for several hours.
    Remove and discard rind from cheese with a vegetable peeler. Cut cheese into 1-inch cubes. Combine cheese, tomato, and remaining 5 ingredients; stir well. cover and chill several hours. Add pasta, and toss gently. Serve at room temperature.
    Yield: 8 servings
