1/2 c. roasted Pepper Olive Oil
2 c. White Cooking Wine w/Lemon Flavor (Holland House)
4-6 Boneless Chicken Breasts - cubed
2 tsp. Crushed Red Pepper
1 tbsp. Red Hot (to taste)
2 c. Mushrooms - sliced *
1 lg. can diced Tomatoes
12 oz. pack of Lemon Pepper Pasta
* can be deleted or substituted with frozen Artichoke Hearts Recipe
Coat skillet w/olive oil and brown the chicken. Add wine, red pepper, red hot, tomatoes & mushrooms, simmer 1 hour. Cook pasta per directions. Pour Chicken and ingredients over pasta and serve.
