List of Ingredients
3 slices bacon
1/4 cup Parmesan cheese
2 eggs
2 cloves of fresh garlic, chopped fine
linguine noodles, enough for 4 servings
Boil noodles until al dente. Cut bacon into small pieces and fry until crisp and golden brown. Remove from oil and place on paper towels to blot excess oil. Pour off at least half of the bacon drippings. Gently saute the garlic over a low flame in the remaining oil, being careful not to brown or burn it. Toss noodles in the pan with the garlic and return the bacon to the pan, add the Parmesan cheese and continue to toss over a very low flame. Remove from heat. Beat the eggs completely and pour over the pasta mixture. Continue to toss until everything is well combined. When combined with the Parmesan cheese, the eggs will create a creamy, thick kind of sauce. Use pasta water to loosen if the dish becomes too stiff.
