List of Ingredients
1 tablespoon olive oil
3 boneless, skinless chicken breast halves (about 3/4 pound), sliced into strips
1/4 cup flour
Black pepper to taste
1 clove minced garlic
3/4 pound penne pasta (or other short tubular pasta)
4 cups broccoli florets and peeled stems, cut into bite-size pieces
1 cup grated Parmesan cheese
1 stick butter, softened
Recipe
Wash hands. Place a large pot filled with water on stove under high heat (for the pasta).
Place oil in large skillet.
Place flour on large piece of wax paper; sprinkle with pepper, as desired.
Heat skillet over medium heat. Lightly coat chicken in flour mixture; shake off any excess and immediately place in hot skillet.
Saute for 2 minutes, stirring frequently until just browned on both sides.
Stir in garlic; cook 1 minute longer.
Cover pot to keep warm.
When water is at a rolling boil, add pasta and cook, uncovered, for 6 minutes.
Carefully add broccoli and continue to cook, about 2 to 3 minutes, until pasta is just tender and broccoli is cooked.
Scoop out 1 cup of pasta cooking water and then drain pasta.
In large serving bowl, blend Parmesan cheese with butter until fluffy. Blend with reserved cooking water to make a sauce.
Add pasta, broccoli and chicken; toss gently until combined.
