Bob Bogey Poker Night Pasta Salad

List of Ingredients
½ cup olive oil
1 cup fresh basil leaves
salt to taste
4 Tablespoons red wine vinegar
1 lb. pasta shells, cooked al dente
8 plum tomatoes, sliced
1 lb. grilled chicken breast, cut into finger sized pieces
1 lb. mozzarella cheese, diced
¼ cup parsley, chopped
In a food processor or blender, combine the olive and the basil leaves. Pulse until chopped into a coarse puree. Add the vinegar and salt. Pulse again until combined. Refrigerate until ready to use.
In a large serving bowl, combine the pasta, tomatoes, grilled chicken, mozzarella and parsley. Gently toss with dressing and serve.
