Cake Roll:
4 large eggs
3/4 cup sugar
1 teaspoon baking powder
1 teaspoon lemon juice
2 teaspoons grated lemon rind
3/4 cup flour
Powdered sugar
Spiced Applesauce Filling:
1 cup sweetened applesauce made from flavorful apples (preferably Granny Smith)
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon ginger
Recipe
Preheat oven to 325 degrees. Spray a jelly roll pan, or small cookie sheet with sides, with cooking spray. Cover with a sheet of waxed paper and again spray with cooking spray. Have a kitchen towel spread out on counter and sprinkle with sugar.
Beat whole eggs until mixture begins to thicken. Slowly add sugar while beating and beat until light-colored and very thick. Add baking powder, lemon juice, and rind slowly. Gently fold in flour. Spread batter in prepared pan and bake for approximately 12 minutes or until light tan. Immediately flip onto towel sprinkled with sugar and remove waxed paper. Roll up, cover with towel, and let it rest for 10 minutes. Unroll, spread with spiced applesauce, and roll up again. Sprinkle with powdered sugar. It is ready to slice and serve in an hour.
