    FILLING:
    3/4 cup ricotta cheese
    1/2 cup cottage cheese, sieved
    1/4 cup sour cream
    3 tablespoons ground almonds
    1/3 cup butter
    2 cups fresh bread crumbs
    2 teaspoons all-purpose flour
    8 sheets filo pastry (8 oz)
    1/2 cup butter, melted
    1 can (16 oz/500 g) black cherries, drained
    1/3 cup packed brown sugar

    GARNISH:
    powdered sugar

    Preheat oven to 400F (205C). To prepare filling, beat ricotta cheese, cottage cheese and sour cream in a medium-size bowl until smooth. Stir in almonds. Set aside. Melt 1/3 cup butter in a large skillet over medium heat and fry bread crumbs until golden. Set aside.

    Spread a tea towel on counter and dust with flour. Working quickly, lay a sheet of pastry on tea towel and brush lightly with melted butter. Cover with a second sheet of pastry and repeat until all pastry is used. Spoon filling over pastry, leaving a 1-inch border on all sides.

    Spoon drained cherries over filling. Sprinkle bread crumbs and brown sugar over cherries. Roll lengthwise, jelly-roll fashion. Place on a baking sheet. Brush surface with melted butter. Bake in preheated oven 40 minutes or until golden brown. Cool. To garnish, dust with icing (powdered) sugar.

    Makes 8 servings.
