Heidleberg Apple Kuchen

Batter:
2 1/2 tablespoons softened butter
3 tablespoons confectioners' sugar
2 eggs
1/2 teaspoon pure vanilla extract
1/3 cup unbleached white flour
1 teaspoon baking powder
3 medium apples, peeled and thinly sliced
1/2 teaspoon cinnamon
TOPPING:
1 cup milk
3 tablespoons unbleached white flour
2 tablespoons sugar
2 eggs, separated
1/2 teaspoon pure vanilla extract
Recipe
FOR THE BATTER: cream the butter until smooth. Beat in the
confectioners' sugar. Add the eggs and vanilla. While constantly
beating, add the flour and baking powder and beat for a few more
minutes. Spread the batter in a buttered 10-inch pie plate. Arrange
the apple slices on top and sprinkle on the cinnamon.
Preheat the oven to 350 degrees F.
FOR THE TOPPING: In a saucepan, mix flour, sugar with the milk.
Cook on low heat until thickened. Remove the pan from the heat
and whisk in the egg yolks. In a separate bowl, beat the egg
whites until stiff.
Fold in the egg whites and vanilla with the rest of the topping
and mix thoroughly. Spread the topping over the apples and bake
the kuchen for 30 to 35 minutes. or until the topping is set and
lightly browned.
