1/4 cup warm water plus additional tablespoon
1 package active dry yeast
4 1/4 cups sifted flour
1 teaspoon sugar
1 1/4 cup lukewarm water
2 tablespoons olive oil
Recipe
Pour 1/4 cup warm water into a large bowl. Sprinkle in yeast and sugar. Stir to dissolve. Allow 5 minutes for yeast to foam. Mix in 2 cups of flour, then add salt. Pour in lukewarm water and oil and beat until smooth. Mix in remaining flour and knead on a lightly floured board until elastic. Roll dough into a ball and place in a bowl greased with olive oil. Lightly brush dough with olive oil. Cover and let rise in a warm place until it doubles in size. It takes about one hour.
