Pizza Baker's Flatbread

Short crust:
2 cups all-purpose flour
1/4 pound butter
Pinch salt
1 egg
1/2 cup water
Toppings:
Thinly sliced mozzarella, to taste
Thinly sliced (preferably fresh) provolone,
to taste
Skinned, seeded tomato, cut into bits,
to taste
Chopped garlic, to taste
Oregano, to taste
Combine all crust ingredients well. Roll out dough quite thin and lay it in a lightly greased baking pan. Top with a layer of the mozzarella and then provolone. Over that, scatter the tomato bits, garlic and oregano. Place in a 400 F oven for about 30 minutes, or until desired doneness.
Yields 6 to 8 servings.
