Potato and Onion Calzones

Pizza Dough
3 small potatoes, peeled and thinly sliced
2 large onions, thinly sliced
2 Tbsp. olive oil
1 1/2 tsp. coarse salt
2 cloves minced garlic
1 tsp. oregano
2 Tbsp. chopped fresh basil
1 cup grated mozarella cheese
Recipe
Cut dough into four equal pieces. Knead out any air bubbles. Shape each piece into a ball. Place on lightly covered surface and let rise again until doubled in bulk, about 1 hour. In a bowl toss all ingredients together. Now preheat oven to 425 degrees. Oil 2 large baking sheets. On a lightly floured surface roll out dough into a 9" circle. Put on baking sheet. Spread 1/4 of mixture on half of the dough cirlce. Fold dough over (turnover style) leaving a 1 inch border. Press edges together and crimp tightly. Cut several slits across the top. Repeat with remaining dough and filling placing two calzones on each baking sheet. Bake calzones for 30 or 40 minutes or until golden brown. Wonderful served with Dad's Spaghetti Sauce ladled over the top (in the sauce category).
