Sweet Onions & Pepperoni Calzones

Serves 2 adults and 2 children
List of Ingredients
Olive oil spray
1 10-ounce can of refrigerated pizza dough
4 ounces low-fat mozzarella cheese, grated
Grown-Ups
1/4 pound Walla Walla or other sweet onion, thinly sliced
Salt and pepper for seasoning
2 tablespoons dry white wine or water
4 pitted and chopped Greek olives
Optional: 2 anchovy filets, drained and chopped
Children
2 tablespoons pizza sauce (can be purchased in a squeeze bottle)
2 tablespoons chopped pepperoni or Canadian bacon
Recipe
Set oven temperature to 350�. Coat a large non-stick baking sheet with olive oil spray and set aside. Coat a non-stick skillet with olive oil spray and heat for 2 minutes over medium-high heat. Add the onion and season with salt and pepper. Cook for 2-3 minutes while stirring. Add the wine and olives. Cover and simmer for about 5 minutes until the onions are soft. Remove the cover and allow any liquid to evaporate.
Unroll the pizza dough and cut into 4 even size pieces. Place a layer of cheese in the center of 2 pieces of dough. Top with the onion mixture and sprinkle with anchovies, if using. Spread the pizza sauce in the center of the remaining pizza dough. Top with cheese and pepperoni.
Form the calzones by bringing the corners together in the center twisting to secure. Pinch the seams together until sealed. Place on the baking sheet and bake for 20 minutes until golden brown.
