    The Ultimate Pizza Dough

    1/2 cup lukewarm water
    1 tablespoon sugar
    1 package yeast
    3/4 cup lukewarm milk
    1/2 teaspoon salt
    1/4 teaspoon baking soda
    2 1/2 cups bread flour
    1/4 tablespoon warm water

    Recipe



    In an 8 oz measuring cup, stir together the first 3 ingredients and let the mixture stand until it bubbles to the top of the cup. (Proofing)

    Dissolve baking soda in the 1/2 Tbs. warm water. (Softening)

    In medium bowl, combine warm milk, salt and soda-water mixture with 1 cup of flour, beating with a wire whisk until smooth.

    Beat in yeast mixture and then the remaining flour USING a slotted spoon. This batter should be thick and sticky but smooth. (no flour lumps)

    Spray 2 8" or 9" cake pans that release on the side or from the bottom with Pam. Or a 9x13 pan or a large baking stone used for pizza or.. a large cookie sheet.

    Pour dough in and slightly spread with the slotted spoon.

    Spray plastic wrap with Pam (cover this well) and place over the dough. Smoothing out to the edges.

    Let rise about an hour.

    Don't move after placing the dough to rise..**I like to drissel olive oil and garlic juice over the tops and add fresh rosemary or thinly sliced basil with a dash of sea salt on the tops before these babies rise. Just me I guess. Keep where they are at and remove plastic wrap and spray the tops with Pam once again. Bake on center rack @ 375F for about 10-15 minutes, remove from the oven and top with the goodies..
