1/2 c. warm water
Heaping 1/2 t. active dry yeast
Pinch of sugar
3/4 c. flour
1/2 c. whole wheat flour
1/2 t. salt

Pour 1/4 c. of the water into a measuring cup. Stir in the yeast, sugar and 1 t. of the flour. Bubbles should form on the surface in about 8 min. In a mixing bowl or food processor combine 3/4 c. of the flour and salt. Blend in the yeast mixture and the remaining 1/4 c. water. Beat 2 min. The dough should be soft and sticky. Add the remaining whole wheat flour by the tablespoonful until it is somewhat, sticky, soft and very elastic. Knead about 5 min. Oil a medium bowl, put in the dough and cover with plastic wrap. Let it rise at room temperature until it has nearly tripled in size, about 2 hours. About 20 min. before baking, punch it down and knead a min., then form it into a ball and cover. Roll dough on floured surface to a 13 inch round about 1/8 inch thick. Set on oiled baking sheet, or stone. Let rest 10 min. Top pizza as desired. Bake 10 min. at 500 or until golden.
