Chicken A La Grace

List of Ingredients
4 boneless chicken breasts, flattened,
1/2 cup Parmesan cheese,
2 eggs, beaten,
3/4 cup plain bread crumbs,
3/4 cup cooking sherry (white),
1/2 cup oil,
1 tsp. Accent seasonings,
1/2 pound mushrooms, fresh or canned,
Monterrey Jack Cheese
Recipe
Place cheese, eggs, and breadcrumbs in 3 bowls.
Press chicken into eggs, cheese, then bread crumbs.
Heat oil and add chicken.
Sprinkle with Accent and brown on both sides. Remove and place in single layer in baking dish.
To the hot oil, add sherry and mushrooms.
Sauté 5 minutes.
Place a slice of Monterrey Jack cheese on each piece of chicken.
Spoon mushrooms over chicken.
Add pan juices to dish and bake covered at 325 for 30-40 minutes.
Serve over rice.
