4 boneless, skinless chicken breasts (pounded thin)
4 thin slices boiled or baked ham
2 oz. Swiss cheese, shredded
3 tablespoons flour
1/4 teaspoon pepper
1/8 teaspoon salt
1 egg white
3 frozen hamburger buns, grated when frozen for soft bread crumbs
1 tablespoon margarine or butter
Recipe
Top each chicken breast with a slice of ham and some cheese. Roll each breast up to make a compact bundle. Secure with two toothpicks. On a plate, combine the flour, pepper, and salt. Place the egg white in a shallow bowl and beat lightly. Place the grated hamburger buns on another plate.
Dip each chicken bundle into the flour mixture, egg white, and bread crumbs, pressing to coat. Melt the butter in a large non-stick skillet over medium heat. Place the chicken in the skillet and cook for about 4 to 5 minutes on each side to brown. Remove chicken and place them on a baking dish. Bake the chicken at 350 degrees for about 25-30 minutes or until done.
