    1 ready-to-cook, cut up, duckling
    small amount of oil for browning
    1 teaspoon ginger
    1 clove garlic, minced
    1 medium onion, sliced
    1 cup sliced raw carrots
    1 cup orange juice
    1 cup pineapple juice
    2 green peppers cut into 1" strips
    1 (20 oz.) can chunk pineapple, drained
    1/4 cup cornstarch
    1/2 cup cold water
    Optional: 1/2 cup red wine

    Recipe



    Brown duckling in oil in large frying pan.
    Sprinkle with ginger and minced garlic.
    Add orange juice, pineapple juice and wine (if desired).
    Add carrots.
    Cover and cook for 15 minutes.
    Add green pepper, onion and pineapple slices.
    Continue cooking until duckling and carrots are fork-tender, about 30 minutes.
    Blend cornstarch and water.
    Slowly add and stir cornstarch mixture into duckling mixture; stir gently until sauce thickens.
    Can serve over cooked rice or mashed potatoes, if desired.
