    Herb 'n' Spice Turkey Breast

    3 T. vegetable oil
    1 T. brown sugar
    1 tsp. salt
    1/2 tsp. rubbed sage
    1/2 tsp. dried thyme
    1/2 tsp. crushed dried rosemary
    1/4 tsp. pepper
    1/8 to 1/4 tsp. ground allspice
    1 (4-1/4- to 6- pound) bone-in turkey breast

    In a small bowl, combine the oil, brown sugar, salt, sage, thyme, rosemary, pepper and allspice. Carefully loosen the skin from the turkey. Rub herb mixture under the skin; rub remaining herb mixture over the skin. Place turkey breast side up on a rack in a roasting pan. Bake, uncovered, at 325º for 1-1/2 to 2-1/4 hours or until a meat thermometer reads 170º (cover loosely with foil if turkey browns too quickly). Cover and let stand for 20 minutes before carving.

    Serves 10.
