    Pecan-Crusted Turkey Cutlets

    3/4 cup soft breadcrumbs, toasted
    1/2 cup finely chopped pecans
    1/2 tsp. dried sage
    1/4 tsp. salt
    1/4 tsp. pepper
    1 egg white, lightly beaten
    1 Tbs. water
    4 4-oz. turkey breast cutlets
    Butter-flavored cooking spray

    4 servings

    Preheat oven to 350º.

    Combine first 5 ingredients in a shallow dish; set aside.

    Combine egg white and water. Dip turkey breast cutlets in egg mixture, then in pecan mixture. Place on a baking sheet coated with cooking spray. Coat cutlets with cooking spray.

    Bake at 350º for 12 minutes or until juices run clear when cut with a knife.
