    1/4 cup vegetable oil
    1/4 cup finely-chopped fresh cilantro
    1 1/2 oz tequila
    1 1/2 tbsp ground cumin
    1 tbsp chopped garlic
    1 tsp salt
    1/2 tsp freshly-ground black pepper
    1/8 tsp cayenne pepper
    2 lb boneless skinless chicken breast ha
    1/2 stick butter


    Recipe



    Heat oven 400 degrees.

    In a large bowl, combine oil, cilantro, tequila, cumin, garlic, salt,
    pepper and cayenne. Add chicken and toss to coat.

    Transfer chicken to a baking sheet. Bake 12 to 14 minutes, or until
    largest piece is cooked through.

    Remove from oven and top each breast with a small pat of butter and let
    melt.

    This recipe yields 4 servings.
