List of Ingredients
3 c. leftover turkey, chopped or diced
1 large apple peeled and cored (covered with lemon juice to protect from browning)
2 celery stalks, de-ribbed and diced
3 tbs. Capers
3 tbs. grainy mustard (moutarde de meaux)
1 tsp. Dijon mustard
2½ c. of walnuts or pecans
1 head lettuce or your choice - chopped
1 cup vinaigrette (olive oil, vinegar, mustard)
Fresh chives or parsley
1 tomato for garnish
1 red pepper for garnish
1 hard boiled egg for garnish
Recipe
To make turkey salad:
In a large bowl place chopped up cubed turkey. Add the apple, celery, capers, 2½ c. of mayonnaise, and mustards. Toss gently until well blended. Taste and correct the seasoning with salt and pepper. Refrigerate until ready to serve.
To serve:
Chop your lettuce and toss with vinaigrette. Place each portion of lettuce on a plate. On each plate place a mound of the turkey salad. Sprinkle with nuts and chives or parsley. Surround with slices of hard-boiled eggs, bell peppers and tomato sections. Serve with toasted pita bread and a Chardonnay or Hedges Chardonnay Fume.
