Turkey Skillet Egg Foo Yong

2 cups shredded cooked turkey
1/4 pound mushrooms, chopped
1 cup bean sprouts
1/2 cup grated carrots
1/4 cup thinly sliced green onion
1 teaspoon minced garlic
4 eggs
1 tablespoon soy sauce
1/4 teaspoon pepper
1/4 teaspoon red pepper flakes
1 teaspoon oil
Recipe
In large bowl combine turkey, mushrooms, bean sprouts, carrot, onion, and garlic.
In small bowl beat together eggs, soy sauce, pepper, and red pepper flakes. Stir into turkey mixture.
In 10-inch non-stick, oven-proof skillet, over medium-high heat, saute turkey mixture in oil. Reduce heat to medium-low and cook 8 to 10 minutes, or until mixtutre is set on bottom and lightly browned.
Broil 3 inches from heat 2 to 3 minutes, or until top is lightly browned. Serve with additional soy sauce, if desired.
