Turkey Tamale Pie

List of Ingredients
1 onion, chopped
1 green pepper, chopped
2 tablespoons of olive oil
3 cups of cooked turkey, cubed
2 tablespoons of chili powder
1 teaspoon of ground cumin
1 1/2 teaspoon of salt
1/2 teaspoon of salt
1/2 teaspoon of dried oregano
One 14 1/2 ounce can of diced tomatoes
One 3 1/2 ounce can of chopped green chilies, drained
1/2 cup of frozen corn kernels, thawed
3 1/2 cups of mashed potatoes, divided
1 cup of shredded Cheddar cheese
Preheat your oven to 375ºF. In a large skillet over medium high heat, cook the onion, and pepper, in hot oil for 5 minutes, stirring frequently. Add the turkey, chili powder, cumin, salt and oregano, cook stirring, for 3 minutes. Stir in the tomatoes, chilies, corn kernels and bring to a boil. Reduce the heat to low and simmer for 8 minutes. Meanwhile in a large bowl, combine the potatoes and cheese until well blended. Spoon 1 1/2 cups of potatoes into the bottom of an 11 x 7 inch baking dish, patting to form a bottom crust. Spoon in turkey mixture, top with the remaining potatoes. Bake for 25 minutes or until golden. Makes 8 servings
