Blender Popovers

List of Ingredients
( not as difficult as you think! )
3 large eggs
3 Tbs melted butter, margarine or oil
1 1/2 cups milk
1/2 tsp salt
2 garlic cloves smashed ( optional ) -for savory popovers
OR
1 tsp cinnamon mixed with 1 Tbs. sugar- for fragrant popovers
1 1/2 cups all purpose flour
Have all ingredients at room temperature.
Heat oven to 425F, In blender, add eggs, shortening, milk, salt, (garlic or sugar & cinnamon ) and lastly flour. Blend all well. Consistency should be like heavy cream. Grease well muffin tins, popover tins or individual custard cups. Heat empty tins in oven a few minutes. Carefully, remove tins from oven and fill cups about 3/4ths full. Return to oven and bake popovers 20 to 30 minutes on middle oven shelf. Don't open door any sooner to peek or they will fall . Popovers should be puffed and golden. Batter is enough for 6 to 9 popovers.
Note 1: serve immediately as all popovers will deflate when cooling.
Note 2: Depending on the recipe you may use for popovers and how they are baked, , some popovers are drier and firmer than others which may have more of a soft or custard quality texture. If you also overfill the tins, the popovers may tend to be heavier in consistency ( which some people like - similar to Yorkshire pudding- see last note below ). Also timing is very important when you plan to serve these. Lastly, to solve problems of removal from grouped tins; you may wish to bake popovers in individual serving tins or cups,
Note 3: Yorkshire Pudding recipes are basically popover recipes but baked somewhat differently.. The popover mixture is poured on top of the sizzling hot beef pan drippings ( roast beef removed from pan of course ) and the mixture bakes and puffs up. Then, served immediately; pieces are cut out from the pan.
