    2 1/2 cups flour
    3/4 cup sugar
    3 tsp. baking powder
    1/2 tsp cardomon
    1/2 tsp salt
    1 stick butter or margarine cold
    1 cup small curd creamy cottage cheese
    1 egg
    1 tsp vanilla or lemon extract
    1/3 cup raisins
    3 Tbs. melted butter




    Sift all dry ingredients into a bowl including the sugar.Cut in the butter until coarse meal consistency. Mix together the cheese, vanilla and extract.Add to flour mixture along with raisins. Stir by hand with a wooden spoon until a dough forms. Turn out to a floured board and knead about 10 times, adding only small amounts of more flour if needed to prevent stickiness. Dough should be soft but not stiff. Roll into a 10 inch circle with a floured rolling pin.. Brush with 1 Tbs melted butter. Fold dough almost in half- just off center. Carefully place on a greased baking sheet. Bake in a preheated 350F oven about 40 to 50 minutes or golden. Brush with remaining 2 Tbs. melted butter. Cool completely. Wrap in foil and let mellow 2 days before serving. Dust with powdered sugar.
    Note: this has a European pastry quality, excellent taste and texture . Remember to prepare in advance and let the stolen age to mellow flavors. Great with coffee or tea
