Flaky Empanada/turnover Dough

( a Spanish filled pastry turnover )
3 1/2 cups flour
1 cup lard or Crisco ( white vegetable shortening ) melted and cooled
1/2 tsp salt
1/2 cup beer -room temperature
Mix the flour with melted fat and salt. Add enough beer to form into a dough. Do not over blend. Pull off pieces of the dough and roll out on a lightly floured surface to a 3 inch circle. Place 1 tsp of desired cooled filling of choice ( could be sweet or savory ) in center. Fold over edges over to seal. Crimp with fork. Brush with some extra melted shortening. If a sweet filling, sprinkle a little granulated sugar over the dough. Bake 400F about 15 minutes or until golden.
Note: you can also make this dough in the food processor with metal blade.
Note: there are a variety of empanada doughs which are essentially pie pastry dough .
Some empanadas may be filled with either sweet or savory fillings.
