Pate Brise (Rich Pie Dough)

1 pound flour
1 tsp salt
1/2 cup butter
1/2 cup shortening
Ice cold water
Recipe
Work flour, salt, butter and shortening until well mixed. Add 1 Tbsp of water at a time until dough is soft and forms ball in bowl. Knead twice, then let rest covered with damp towel or waxed paper. Divide dough and roll on floured board to 1/8 inch thickness. Place each round into 9" pie plates and crimp edges. Pierce bottom with tines of fork and weight down with beans placed on wax paper to prevent dough from shrinking when baking. Bake at 350 degrees 25 minutes, or until crust is golden. Remove beans and return crusts to oven to brown about 5 minutes longer. Cool. Makes 2 (9") pie shells.
