    Pot Pie Dough- Single Prebaked Top Crust

    ( or use any 1/2 basic pie dough recipe from my Pie Pastry Primer
    This recipe makes one prebaked top crust to place over a hot pot pie filling! )


    12 oz flour
    8 oz lard or Crisco ( white vegetable shortening )
    4 oz. cold water
    Pot Pie Filling of choice

    Combine dry ingredients. Cut in fat to form coarse meal texture. Add enough water and mix into a dough. Roll 1/8 inch thick to fit your pot pie pie tin. Trim and prebake dough 450F until lightly browned 9 about 10 minutes or so. Set aside. Prepare your chicken pot pie mixture and place in another greased deep dish pie tin of same diameter as top crust. Cover with the prebaked top crust ( invert it from tin ) and bake 350F about 10 to 15 minutes or until filling mixture is well heated.
    Note: no pastry on bottom tin, only on top
