List of Ingredients
21/4 cups plain or all-purpose flour
1/4 teaspoon salt
3 Tablespoons unsalted butter
4 Tablespoons lard
1 Tablespoon confectioner's sugar
1 egg yolk
3 Tablespoons cold water
Milk and beaten egg to brush pastry ....if you are making a pie
Recipe
To prepare the pastry;
One thing to remember when making pastry try to keep everything cold and to get it made as quickly as possible.
Mix the flour and salt in a mixing bowl. Cut the butter and lard into small pieces and mix them into the flour with the blade of a knife until they are well coated.
Using your finger tips, rub in the fat until the mixture resembles fine breadcrumbs. Stir in the sugar. Mix in the egg yolk with the water and pour into the flour. Mix quickly with a palette or regular knife until it forms a dough.
Knead the pastry lightly until it is smooth and has no cracks.
Wrap it in waxed paper and chill in the refrigerator for 30 minutes before using.
METHOD
Roll out the pastry and cut out 12 circles with a 3 inch cutter. Line the 12 holes of a bun or tart tin with the pastry. Place a teaspoon of the jam in each pastry case. Do not overfill or the jam will boil over and make a very sticky mess. Bake at 400 degrees for 15 minutes or until the pastry is golden.
Cool on a wire rack.
