1/2 cup vegetable shortening
1-1/2 cups pastry flour, sifted
1 teaspoon salt
2 to 3 tablespoons cold water
Recipe
Sift dry ingredients into a bowl. Cut in shortening until mixture is consistency of corn meal. Sprinkle with cold water, a little at a time, over different parts of the flour mixture. Toss lightly with a fork. Use as little water as possible.
Place dough on waxed paper, knead 3 times. Press gently with paper into a ball.
Let stand at room temperature for 15 minutes.
Roll dough into a circle 1/8-inch thick and fit into a 9-inch pie pan.
For best results use a pastry canvas and rolling pain cover.
Use for a single crust pie that has to be baked or prebake.
To prebake; Prick with a fork. Bake in a 450F oven for 10 to 12 minutes.
