Watermelon Rind Pickles

1 large, firm ripe watermelon
1/4 cup non iodized salt
4 cups sugar
2 cups white vinegar
2 cups water
1 lemon, thinly sliced
2 sticks cinnamon
1 tablespoon whole cloves
Remove the green skin and pink flesh from the white rind; reserve the flesh for another use. Discard the skin and cut the rind into 1-inch pieces and reserve. You should have 8 cups.
In a large lidded container, cover the watermelon rind pieces with
water; add salt and mix well to dissolve. Cover, and soak overnight. Drain and rinse well. Place in a large pot and cover with fresh water. Bring to a boil and reduce heat to low. Cook for 5 minutes and drain.
In another pot, combine the remaining ingredients and bring to a boil. Lower the heat and simmer for 20 minutes. Add the drained rind pieces and simmer for 7 minutes. Ladle into sterile, hot jars; cover well with syrup, then seal and process by boiling sealed jars for 15 minutes.
