Au Gratin Potatoes with Sausage

1/4 cup butter
1 can (10 3/4 oz.) cream of mushroom soup
1 pint (2 cups) sour cream
1/3 cup chopped onion
1 1/2 cups (6 oz.) shredded Cheddar cheese
7 medium potatoes (approx. 7 cups)
1 Ib. smoked sausage slices
1 can (2.8 oz.) French fried onion rings
Recipe
In large 3 qt. saucepan melt butter; stir in soup, sour cream, onion and cheese. Set aside. Dice potatoes and add to sauce. Place in a 12x8x2-inch buttered casserole dish and bake uncovered at 350F for 45 minutes. Remove from oven; stir in sausage slices and continue baking for 15 minutes or until potatoes test done and tender. Top with French fried onion rings and bake 10 minutes longer.
VARIATION:
Instead of the oven, the potatoes may be cooked in a crock-pot for 6 to 8 hours. Onions may be crisped in oven and added as garnish.
