    Bacon-Buttermilk Mashed Potatoes

    3 slices bacon
    2 pounds potatoes -- peeled and quartered
    1/2 cup buttermilk
    1 tablespoon butter
    1 tablespoon chives -- fresh chopped
    salt and pepper -- to taste

    Recipe



    Cook the bacon, drain and crumble. Reserve bacon and bacon fat.

    Steam the potatoes until very tender. Drain well. Place in the big mixint bowl and whip. Add buttermilk, butter and reserved bacon fat; season to taste with salt and pepper.
