    4 baking potatoes
    2 ounces Somerset Brie
    1 teaspoon dried chives
    1 teaspoon salt
    1 egg yolk
    2 ounces butter

    Wash the potatoes and bake them in their jackets at 350F for approximately 1 hour or until cooked through. Remove the potatoes from the oven and slice approximately 1 inch lid from the top flat side of each potato. Scoop out the middles to within 1/2 inch of the jackets, taking care not to pierce the skin. Arrange the jackets in a roasting tin. Put the scooped out potato into a mixing bowl. Add the Somerset Brie, chives, salt, egg yolk and butter and beat with a wooden spoon until mixed well. Spoon the mixture back into the jackets, piling it up and rounding the tops. Place the potatoes in an oven preheated to 375F and bake for approximately 10 to 12 minutes or until the top of the filling is golden brown.
