    Chicken Enchilada Stuffed Baked Potatoes

    4 baked potatoes
    12 ounces chicken breast, grilled
    1 tablespoon butter
    ¼ cup green onions, diced
    1 cup fresh mushrooms, sliced
    ½ cup sour cream
    ½ cup cheddar cheese, shredded

    Slice the grilled chicken breast and add to a skillet with the butter, green onions and mushrooms. Saute for approximately 4 minutes to cook the mushrooms. Add the sour cream and mix well. Place the baked potatoes on a plate and cut a zig-zag line across the top of the potato. Squeeze the potato evenly on all four sides to open the top. At this point, you may add butter if desired. Now spoon the chicken mixture into the potatoes and top with shredded cheese.

    Want to spice this meal up a bit? Add a spoonful of your favorite Made In Oklahoma salsa on top of the cheese.
