    6 lg red potatoes, peeled and quartered (about 4 lbs)
    2 carrots, finely chopped
    2 (4.5 o) cans chopped green chiles, drained
    1/2 cup sour cream
    1/4 cup butter or margarine, softened
    1 tsp salt
    3/4 tsp pepper
    1/4 to 1/2 tsp ground cumin

    Recipe



    Cook potato in boiling water to cover 25 minutes. Add carrot; cook 5 minutes or until potato is tender. Drain; stir in chiles. Beat potato mixture, sour cream, and remaining ingredients at medium speed with an electric mixer until smooth.

    Makes 4 servings.
