3 medium baking potatoes, unpeeled, 1/2-inch thick
1 tablespoon vegetable oil
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup grated parmesan cheese
1 cup shredded cheddar cheese
1 small green onion, chopped (optional)
3 to 4 tbsp. fresh chives, minced
Recipe
Combine potatoes and oil in a 12x8x2-inch baking dish; toss well. Sprinkle potatoes with chili powder, salt, and pepper. Cover tightly with plastic wrap and microwave about 15-18 minutes or until tender, stirring gently every 3 minutes. Sprinkle with cheese, onion, and chives. Let stand, covered, 5 minutes.
