Chipotle White Cheddar Mashed Potatoes

4 lb. Idaho baking potatoes (cleaned, peeled and quartered)
1 ½ lb. Redskin potatoes (cleaned and halved)
1/3 - ½ lb. butter
kosher salt and black pepper to taste
1 tbsp. roasted garlic (finely chopped)
1 tbsp. horseradish (minced)
1 cup buttermilk
4 - 5 whole chipotles (seeded and finely chopped)
1 lb. Sharp white cheddar cheese (grated)
Recipe
Combine all potatoes in one pot. Cover with cold water. Bring to a boil and cook until fork tender.
Meanwhile combine all ingredients except cheddar cheese and chipotles in small sauce pan and heat on low until simmering.
When potatoes are fork tender, drain them well and place in large mixing bowl. Mix on low speed for 1 - 2 minutes, then slowly add in the hot buttermilk and butter mixture.
After all liquid has been added, turn mixer to medium and whip until smooth.
Lower speed on mixer again and as chipotles and cheddar cheese. Mix just until they are incorporated. Serve immediately. (Reheat in this situation).
Makes approximately 5 pounds. Serves 8 - 10 people.
